They get home somewhat faster, are far, far more easily able to handle various threat forces (especially the idiotic Kazon Nistrum), can afford to lose more crew, have more resources at their disposal, and have a far better excuse for losing so many shuttlecraft.

Basically with a vastly bigger and theoretically more luxurious starship, most of the drama that was supposed to be one of the key selling points of VOY's premise originally is lost. The only way to gain it back would be to put them up against bigger and badder oppoents... which in the long run, might not have been such a bad thing. Also with a much larger starting Starfleet crew, the Maquis crewmembers become a true minority on the ship, even with half the original Starfleet crew dead, which in turn would lead to more interesting conflict among the crew as the Maquis now is in danger of becoming a truly oppressed minorty on the ship.

Oh no, the bigger and better threat is quite the poorest thing which can happen to a series of films or a show. It's generally badly handled with not after thought for the consequences and the destruction of balance. Generally is requires an equally stupid plot solution to get rid of the menace, and it makes all other menaces silly and negligible by comparison.
Not to say that it would be handled by VOY's staff. You would want to try that? Didn't they already ruin the Borg at the end of the show?

That's the real problem here is the producers and writing staff of the show, which can make or break a show, dispite a great premise. Take a look at the reimagined Ron Moore Battlestar Galactica for how the whole refugees in space premise can be handled properly while being hounded by a ruthless and powerful adversary. We saw serious food shortages; personel shortages; people at each others throats in crowded, nasty living quarters; we saw the ship slowly breaking down and getting beat up over time, not turning back into a shiny, clean ship the next week. That is what VOY could have been like and should have been more like. But we didn't, and I guess all we got a few consolation prizes out of it all like the excellent EMH portrayal and stories, and Seven of Nine.
