OK... so let's say (hypothetically) that you have a full day-long celebration involving you, a few friends, (perhaps several different kinds of gourmet beers and mixed drinks,)* and you've decided the onscreen entertainment will be Trek and/or Wars themed. You have no more than 24 hours of screentime, including breaks; don't assume that everybody will be paying attention to the TV all the time, but assume it's mostly just food, drink, socialization, and in some cases sleep that your home theater is competing with. Assume that you only have Trek and Wars related entertainment material on hand and only a screen, DVD, and VHS player to work with hardware wise.
What's your playlist?

I would intermix the projections of SW and ST toghether so no one would get bored.
SW:
The entire OT
Clone Wars
ST movies:
Wrath of Khan
Undiscovered Country
First Contact
TOS:
The City on the Edge of Forever
Balance of Terror
Space Seed
Arena
TNG:
"The Measure of a Man"
"The Defector"
"The Best of Both Worlds, Part I"
"The Best of Both Worlds, Part II"
(Yeah, I know, I copied Ted C, but what do you want, those were great suggestions... :) )
DS9:
Trials And Tribulations
Season 5's final episode (I'm not too good with names)
Season 6's first episode
Serie's finale
Since each episodes last only for 45 minutes each, even at 2 hours per movie, I'm still under in my alloted time...

I'd try to get in a more represenative sampling from all 5 of the current ST series, which means paring down the movies some, and not going overboard on any one particular ST series over the others.
For the movie selection:
Star Wars:
Star Wars: ANH
The Empire Strikes Back
Star Trek:
Wrath of Kahn
First Contact
For the ST TV series:
Star Trek (TOS)
"The City on the Edge of Forever"
"Balance of Terror" or alternatively "The Doomsday Machine"
The Next Generation
"Best of Both Worlds, parts I & II"
"Yesterday's Enterprise" (alt. "Inner Light"")
Deep Space Nine
"The Visitor" (alt. "Duet)
"In the Pale Moon Light"
"Trials and Tribbl-ations"
Voyager
"Scorpion, parts I & II"
"Tinker, Tenor, Doctor, Spy"
Enterprise
"Similitude" (alt. "Shuttlepod One", "Dear Doctor", or "Twilight")
"In a Mirror, Darkly parts I & II"
There's enough time left over here to include the two franchises' animated series episodes as well.
