Now let's move on to the more interesting part:
A 2 on 2 fight, with Zeratul and Tassadar vs. Obi-wan and Anakin.

On the other hand, zealots don't seem to be very agile to me.
Somehow I'd say that Zeratul and Tassadar would win though. Just a gut feeling, no real evidence.

Well, the Zealot and the Jedi has very many similar things going for them. Both have a what amounts to magical abilities and the primary weapons seem to be energy-blades. Many of their abilities seem similar as well, both have limited battle-precognition and they can sense thing 'through the force'.
Generally, I think the main advantages of the Zealot is the shields, though it's a bit hard guessing how much of a beating it can take before failing. Apart from that, the sheer size and strength of the Protoss should be of some help, at seven plus feet tall and strong enough to carry around power-armor clad humans easily, they'll be quite the bulldozer. And I'm not sure about agility, but they're fast enough to slice zerglings in two in mid-air and otherwise outmaneuver them in battle. Their legs have to be powerful at least, seeing as how they can jump twenty feet in the air.
They are highly resistant to blunt force trauma though, with one getting kicked through a metal wall and still able to get up and fight afterwards. Same with kinetic energy weapons (or projectile weaponry, as it were). But then, the Jedi is not going to use either of those, unless he tries to TK the Protoss.
Another powerful ability is the 'turn to energy to gain speed' thing, which is said to make them as fast as lightning. Apart from that, there are also Protoss who have demonstrated that they're capable of knocking humans unconscious via telepathy, not sure if that's a common ability though.
The Jedi on the other hand have a wider variety of abilities, or so it seems at the moment. Granted the Zealots seem to be able to do a lot more things then shown in game (for obvious reasons), but generally, a wider selection of abilities for the Jedi.
